Sushi Bowl

We especially like this recipe because it is a quick, weeknight dinner option that leaves everyone feeling satisfied and ready for the evening's activities. There is nothing to cook except the rice, and everyone can help dice up the vegetables/fruit. The kids really like this dinner option because they get to build their own bowls with only ingredients that they enjoy. It's quick, fresh, full of vibrant colors, and tasty! We hope you enjoy it as much as we do. 

Fill a bowl with whatever vegetables, grains, starches, fruits, and seeds that you like. Once you have your bowl made, top with your favorite sauce. We like a sesame ginger sauce. You can find options at your favorite grocery store near the stir-fry sauces. Some of our favorite bowl ingredients include:

  • Sushi rice (or whatever rice/grain you like!)

  • Edamame (shelled)

  • Carrots

  • Cucumber

  • Avocado

  • Mango

  • Cilantro

  • Diced sweet peppers

  • Nori (can get nori sheets and cut small pieces, or we really like the Furikake seasoning from Trader Joes)

  • Crushed Peanuts
